1 lb. Ground Lean Beef
1/2 lb. Ground Veal
1/2 lb. Ground Pork
2 Lg. eggs
1 C freshly grated Pecorino Romano cheese
1 1/2 T chopped Italian parsley
1/2 small garlic clove, minced
2 C bread crumbs
2 C lukewarm water
Salt and pepper to taste
1 C EVOO

Directions:
Directions:
1. Combine beef, veal and pork in a large bowl.

2. Add eggs, cheese, parsley, garlic, salt and pepper.

3. Using your hands, blend ingredients together.

4. Blend bread crumbs into meat mixture.

5. Slowly add water, 1 C at a time, until the mixture is quite moist.

6. Shape meat mixture into balls (large, 2 1/2 - 3-inch size).

7. Heat oil in a large saute pan. When very hot but not smoking, fry meatballs in batches.

8. When bottom of meatballs are very brown and slightly crisp turn and cook top half. Remove from heat and drain on paper towels.

9. Lower cooked meatballs into simmering Marinara Sauce or Gravy and cook for 15 minutes.

10. Serve over pasta or on their own.
