1.5# Italian sausage
1 C onion, chopped
2 garlic cloves, minced
5 C beef broth
1/2 C red wine
1/2 C water
1 C carrots, sliced
1 8 oz can tomato sauce
2 large cans stewed or diced tomatoes
1/2 tsp. basil
1/2 tsp. oregano

1/2 C zucchini, sliced
3 T Italian parsley
1 green pepper, chopped
12 oz. cheese tortellini

Directions:
Directions:
Sauté the sausage, onion and garlic together, drain. Add to soup pot all ingredients through the oregano and simmer for two hours. In the last 45 minutes add the zucchini, chopped parsley, green pepper and the tortellini. When ready to serve, top with grated parmesan cheese.
