1 T olive oil
8 oz. spicy breakfast sausage
1 onion, chopped
2 cloves garlic, chopped
1 C mushrooms, chopped
3 C spinach leaves
8 eggs
1 C milk
1 C shredded parmesan cheese
1 C shredded cheddar cheese
3 C baguette bread cubes
1/4 C roasted sweet red peppers, chopped
1 C red and yellow cherry tomatoes, cut in half
Fresh Italian parsley
salt and pepper

Preheat oven to 350 degrees. In a 10 inch cast iron skillet, heat oil over medium heat. Add sausage, onion and garlic. Cook until meat is brown. Stir in mushrooms. Cook five minutes or until tender and lightly browned. Add spinach. Cook for 1-2 minutes until spinach is wilted. Spread mixture evenly in bottom of skillet, add salt and pepper to taste.

In large bowl, whisk eggs and milk, stir in cheeses, bread cubes and red peppers. Pour over mixture in skillet, top with cherry tomatoes that have been cut in half. Bake uncovered about 35 minutes or until a knife comes out clean from center. Let stand 10 minutes and sprinkle with fresh parsley.
