1/2 cup butter, melted
2/3 cup sugar
2 eggs
1 cup buttermilk
1/2 tsp baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 tsp salt

Directions:
Directions:
1. Preheat oven to 375ºF. Grease an 8 inch square pan.
2. In a large bowl, combine melted butter and sugar. Quickly add eggs and beat until well blended.
3. Combine buttermilk with baking soda and stir into mixture.
4. Stir in cornmeal, flour, and salt until well blended and few lumps remain.
5. Pour batter into the prepared pan.
6. Bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.

This is seriously the best cornbread ever. You can also add 1 cup of corn if you want it to be really good. Buttermilk can be substituted with milk mixed with 1 tbsp white vinegar; let sit 5-10 minutes before using.
