2 cans Shoe-peg white corn (16 oz), drained
1 can black eyed peas, drained and rinsed
1 can (16 oz) yellow corn, drained
1 12-oz jar pimientos
1/2 cup chopped green peppers
onion rings from 1 small onion
2 stalks celery, chopped
1/2 cup sugar
1/2 cup red wine vinegar
1/2 cup extra light olive oil
1 tsp. salt
1/2 tsp. pepper

Combine all ingredients in a large bowl and mix well.

This will go a long way and tastes better if it marinates for a few hours before serving. Great with a barbecue.
