•1 tablespoon coconut oil, melted.
•6 slices ham (thin-sliced is better). *Don't use cheap lunchmeat
•6 large eggs.
• Salt and pepper to taste.
•3 tablespoons shredded Cheddar cheese (optional).

Directions:
Directions:
1. Preheat the oven to 200°C. Brush six cups of a muffin tin with the melted coconut oil
.2. Line each cup with 1 slice of ham. Crack 1 egg into each cup. Season with salt and pepper, then sprinkle ˝ tablespoon of Cheddar cheese on each egg.
3. Bake for 13 to 18 minutes depending on how you like your egg yolks set.
4. Remove from the oven and let cool for a few minutes before carefully removing the “muffins.”
Refrigerate in a glass or plastic container so they don’t get smushed or dried out.
