3 quarts small beets
1½ cups vinegar
1½ cups granulated sugar
3 tsp. ground allspice
12 whole cloves

Directions:
Directions:
Boil beets until tender and then peel in cold water. As fast as the beets are peeled, and cut to desired size, drop them into hot sterilized jars. Combine vinegar and sugar and boil for 3 minutes. Into each pint jar of beets, put ½ tsp. allspice and 4 whole cloves. Pour in boiling vinegar and seal. Makes 3½ pints.
