3/4 cup Bacon, diced
1 cup Celery, diced
1 cup Onion, diced
3 tablespoons Flour
1 1/3 cup Water
2/3 cups Cider Vinegar
2/3 cups Sugar
3 teaspoons Salt
1/2 teaspoon Salt
8 cups Potatoes, cubed and cooked

Directions:

1. Cook bacon in a large skillet. Drain the fat but return 1/4 cup of the fat back into the skillet.

2. Add the celery and onion and cook 1 minute. Add the flour and blend with fat.

3. Add the water and vinegar. Cook, stirring constantly until mixture is thick and bubbly.

4. Stir in the sugar, salt and pepper. Pour mixture over potatoes and bacon in a greased 3 quart casserole and mix slightly.

5. Cover and bake in a moderate (350º) oven for 30 minutes.
