Ingredients: Juice of one lemon 3 ripe bananas, mashed 1/2 cup brown sugar 1/2 cup oil or melted butter 1-1/2 cups whole wheat flour 1/2 cup wheat germ (can substitute with an extra 1/2 cup of flour) 1/2 teaspoon salt 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 cup nuts, chopped (optional)

Directions:Preheat oven to 375º. Lightly grease a 9' x 5″ loaf pan. You can line with parchment paper if you want to –it makes it easy to lift the bread out.
Mix mashed bananas with lemon juice. Cream butter or oil and sugar together. Add mashed bananas and mix well. In a separate bowl, stir together the dry ingredients and add to the banana mix. Fold in chopped nuts, if using. The dough will be stiff. Turn dough into greased loaf pan. Bake for about 40 minutes or until a skewer poked into the middle of the loaf comes out clean. Allow to cool completely before removing from pan and slicing. |

Notes: This recipe is taken from the "hippie" cookbook that was soooo popular in the 1970's, called "Laurel's Kitchen." It was a vegetarian cookbook and also incorporated a lot of whole wheat flour into its recipes. My copy was a small paperback book and I made this banana bread from it often. I ended up throwing away my copy and re-ordeirng a new one because mine became so worn out.
