1 ready-made reduced-fat graham cracker crust
11 oz. can of fat-free sweetened condensed milk
2 large eggs
½ c fresh lemon juice
1 T lemon zest
Cool Whip or whipped cream for topping if desired

Directions:
Directions:
In medium bowl, combine the milk and eggs. Mix until smooth. Add lemon juice and zest. Stir until incorporated and pour into crust.

Bake for 15-20 minutes, no more. Cool completely and for best flavor, serve chilled. Top as desired.

This is a Weight Watchers recipe so the servings are small and unrealistic for most. 6 is a better number. In spite of the source, this is quite delicious. Most of my friends love it, not too filling, nicely lemony and not too sweet.
