Sweet Potato Layer:

4 medium sweet potatoes
1 egg plus 1 egg white
2 tablespoons orange juice
2 tablespoons Soy Milk
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt

Broccoli Layer:

32 ounces frozen broccoli florets
2 egg whites
2 tablespoons Mayonnaise
1/4 cup Soy Milk
1 and 1/2 teaspoons onion powder
1 teaspoon salt
1 teaspoon garlic powder
pinch coarse black pepper

Directions:
Directions:
Prepare the Sweet Potato Layer:

Preheat the oven to 350 degrees Fahreneheit.

Wrap sweet potatoes in foil. Place in a baking pan and bake for about an hour, until soft. Carefully remove foil and remove peel.

Place the cooked, peeled sweet potatoes into a mixing bowl. Add egg, egg white, orange juice, soy milk, cinnamon, nutmeg, and salt. Mix well.

Place in a 9- or 10-inch round baking dish and bake for 25 minutes.

Meanwhile, prepare the broccoli layer.

Prepare the Broccoli Layer:

In a large pot, cover broccoli with water and bring to a boil. Boil until broccoli is very soft, about 15 minutes.

In a medium bowl, combine broccoli, egg whites, mayonnaise, soy milk, onion powder, salt, garlic powder, and pepper.

Layer over sweet potato layer and use a spatula to smooth the top.

Return baking dish to the oven and bake for an additional 45 minutes.
