2 T. olive oil
2 cloves garlic, minced
1 c. chopped red onion
1 small (9-12 oz.) pork tenderloin
1 c. apple juice concentrate
2 T. honey mustard
2 T. brown sugar
2 T. apple cider vinegar
2 unpeeled, sweet tart crisp apple, thinly sliced
2½ c. shredded red cabbage
1 bay leaf
salt & pepper, to taste

Heat oil in a nonstick Dutch oven. Add the garlic and onion and saute for 5 minutes. Add the pork tenderloin and brown on all sides, about 10 minutes total. Remove pork and set aside. Add apple juice concentrate and scrape the bottom of the pan to pick up browned bits. Stir in the mustard, brown sugar and vinegar. Return the pork to the pan. Add the apple, cabbage, and bay leaf; salt and pepper, to taste. Stir. Cover pan; reduce heat to low and simmer until the pork is cooked through and the cabbage and apples are tender, 35-45 minutes. To serve, thinly slice the pork and top with pan juices, apples and cabbage. Discard the bay leaf.
