Ann Muto's Biscotti Recipe

½ cup melted butter
1 cup sugar
4 eggs
1½ tsp. vanilla
1 tbsp. almond extract or any flavor you like

3 or 4 cups flour
1½ tsp. baking powder
¼ tsp. salt
½ cup ground nuts

Directions:
Directions:
Preheat oven to 350º

Stir cooled butter with sugar

Add eggs and vanilla

Add: flour, baking powder, salt, and nuts

Dough should be soft but not sticky

You can knead last bit flour into dough by hand

Form the dough into 2 long, flattish loaves

Place on cookie sheet

Bake til cracked and puffed (about 15 minutes)

Slice into ½ inch slices

Let cool or bake again for a few minutes

Italians like their biscotti dry, so they bake it once in a flattened log shape, then slice it, lay the slices out and bake them again. Since I don't like a dry cookie, I just bake the biscotti once, slice and it's done. Ann Muto is the mother of a friend at work.
