Ingredients:
Ingredients:
1 package active dry yeast
1 cup warm water (105º to 115ºf)
1½ teaspoon salt
2 teaspoons sugar
4 cups all-purpose flour
2 tablespoons extra virgin olive oil

Directions:
Directions:
Stir yeast into the warm water until dissolved. Mix flour, salt and sugar in a large bowl. If you are using a mixer, gradually add the yeast mixture and the olive oil into the flour mixture on low speed and blend until the dough is firm and smooth (about 10 minutes) Add a little more water as needed. Knead on a floured surface, adding a little more flour as needed to prevent dough from sticking to hands and work surface until dough is springs and smooth (about 15 to 20 minutes). Divide the dough into four balls. Line two cookie sheets with parchment paper and place two balls on each. Cover with (warm) damp towels and place in a warm place until the dough doubles in size (approx 2 hours)

Roll out dough onto generously floured work surface until desired size using tips of the fingers and working from center outward. Overworking the dough will make it dry. Each dough ball makes up to one 8 to 10 inch round pie (can make oval or rectangle). Can wrap unused dough balls individually with plastic wrap and freeze for up to two weeks.

Personal Notes:
I did have to add water to the mix to get a good result. Also I let the dough rise for 1 hour and
it was good to go.
