1.5 C. Fresh, canned or frozen (thawed) corn
1.5 C. Black beans drained and rinsed
1/2 small red onion diced
1 C. Diced fresh firm Tomato ( I prefer Italian plum)
1-2 fresh firm avocados cut into larger chunks
1/4 C. Chopped fresh cilantro
2T. Olive oil
Juice of 1-2 fresh limes
2cloves fresh garlic, minced
1tsp salt, pinch of pepper
Pinch of cayenne pepper optional
1 small jalapeño, seeded and chopped

Serve with Scoops or as a side with your fish or chicken...

Add everything to a large bowl. Stir. Taste and add more salt pepper or cayenne as needed. Cover and let sit in the refrigerator for at least one hour or up to one day before enjoying. Try not to stor too much. I find it’s flavor is best after an hour or so and the lime juice and red onion keep the avocado from turning brown
