Ingredients: 2 pounds boneless chicken breast 3 sweet link sausage out of the casing 1 red and 1 green pepper cubed in large pieces 2 medium onions diced big 1 chili pepper remove seeds and finally chop 1 can bud beer 1/4 cup chili powder 1 teaspoon cumin one heaping tablespoon chopped fresh garlic or 4 cloves salt and pepper 3 large cans diced Hunts tomatoes (28 ounces) 1 14 oz. small diced tomatoes 1/2 can tomato paste (4oz,) 1 can each 16oz. Black beans and red kidney beans, drained and rinsed

Directions:1. In a large pot sautéed peppers and onions in olive oil with garlic and chili powder about six minutes. Set aside.
2. Chop chicken into cubes then throw into another skillet with some olive oil and the sausage which has been taken out of casing and broken up. Brown well about 15 minutes. Remove and drain.
3. Add tomatoes to pepper mixture, stir and add in spices, beer and chicken and sausage mixture. Bring to a boil and reduce and simmer 30 minutes. Add beans. Cook another five minutes or more. |

Notes: This is another one of my chicken chili recipes that is fantastic...if you don’t want to add beer you may use water instead. When I was learning to cook with my Dad in my early 20’S we put beer in just about everything. Cheers to you Dad.
