1 cup all purpose flour
1 cup cornmeal
1/4 cup sugar
4 tsp. baking powder
3/4 tsp. salt
2 eggs
1/2 cup butter *
1 cup buttermilk


Directions:
Directions:
Preheat over to 425 º
Put butter in 10 inch pan
(Polly uses cast iron)
Put in ovn to heat & melt butter.

Mix thoroughly first 5 ingredients, add eggs, butter and buttermilk and beat with mixer or by hand until smooth, about 1 minute.
Bake for 20 - 25 minutes.

Makes 8 - 9 servings

* Polly puts 1/4 cup butter in mix and leave 1//4 cup in pan when heating up
* Pour mix in pan, then spread butter over top
* Use self-rising flour & corn meal if preferred, leaving out salt and baking powder
