1 c. buttermilk
2 c. sugar
1 t. baking soda

1 T. butter
1 t. vanilla
1½ c. pecan pieces

Directions:
Use a large pot, this will bubble up. Stir buttermilk, sugar and soda with a wooden spoon over medium heat, stirring constantly til it turns brownish in color and reaches soft ball stage on a candy thermometer.(will take a while). Remove from heat and add remaining ingredients. Continue stirring with the spoon until it begins to lose its gloss and starts to crystalize. Quickly spoon out into little patties on waxed paper. Let cool. If it hardens too fast in pan, return to heat til the right consistency and spoon out.
