8 Split bone-in skin on chicken breasts
Water
Carrots
Celery
Fresh tomatoes, chopped large or grape tomatoes, whole
1 Onion
Salt
Bouillon cubes (chicken or vegetable flavor)

Directions:
Directions:
Wash and trim any excess fat and skin from chicken. Place in 8 qt. pot and cover with fresh cold water about 2-3 inches above the meat. Add salt and boil on low heat til foaming. Keep skimming foam til most of it is gone, you won't be able to get all of it out. You will strain it later. Add vegetables and bouillon and let simmer, covered til chicken falls apart and vegetables are cooked. Adjust seasonings to your taste. With slotted spoon, remove the chicken and vegetables from broth. Strain broth into another large pot. If you're freezing soup, do not add the chicken and vegetables. If you are using soup soon, chop the vegetables and add into the broth. Save chicken for another meal or add large pieces back into the broth.
