1 box Uncle Ben’s rice (I use chicken wild rice)
4 small boneless skinless chicken breasts
1/4 cup ranch dressing
1 1/2 tsp. Chili powder
1/2 cup sharp cheddar cheese (can use any yellow cheese)
1 medium red or green pepper, sliced

Directions:
Directions:
Prepare rice as shown on the box.

Spoon rice mixture evenly onto center of 4 large sheets of aluminum foil. Top each with a chicken breast (uncooked), sprinkle with chili powder. Drizzle evenly with ranch dressing. Top with cheese and peppers. Make packets.

Bake for 25-30 minutes at 400 degrees, or until chicken is done.
