1 head of Cauliflower, separated
1 onion, chopped fine
4 cloves garlic, minced
2 tbs. fat
2 Tbs. flour
3 potatoes, peeled and cubed small
2 quarts chicken broth
Parsley
Salt & pepper as needed
Water, as much as is needed
Sour cream

Directions:
Directions:
Separate cauliflower into florets. Chop onion and sauté in fat till translucent; add garlic, flour, and tparsley; sauté a few more minutes.

Add chicken broth (if using low sodium broth, add some chicken boullion to enhance the taste) and bring to a boil; add cauliflower. Continue cooking until cauliflower is cooked through and tender. Check for taste; add salt and pepper as needed. When serving add a dollop of sour cream to the bowl for a finishing touch. It can also be added to the pot if everyone likes it that way.

(PS - water can be added if more liquid is needed)
