1 egg white
Pinch of salt
1 teaspoon lemon juice
1 1/2 cups confectioner sugar (powdered sugar)

Directions:
Directions:
Combine ingredients in a small mixing bowl and beat until light and fluffy. Mixture should stand in peaks. If its too thin, add a little more sugar, a little at a time, while continuing to beat. Put in several bowls. Add one color of food color to each bowl to create several different colors for frosting. When not in use, keep in airtight container, or cover with damp paper towel, as icing will dry out quickly. Frost cooled cookies and allow to dry before putting away. Can also use with pastry bag, for detailed decorating of cakes and cookies.

I don't make my roll-out cookies without icing them with Royal Icing.
