1 1/2 cups graham cracker crumbs
1/4 tsp ground cinnamon
1/3 cup butter, melted

FILLING:
4 (8 oz.) packages cream cheese, softened!
1 1/4 cups sugar
1/2 cup sour cream
2 tsp vanilla
5 large eggs

TOPPING:
1/2 cup sour cream
2 tsp sugar

Directions:
1. Preheat oven to 475º.
2. Make crust: Mix graham cracker crumbs and cinnamon, then add butter.
3. Press crust onto bottom and 2/3 of the way up a 9 inch springform pan.
4. In an electric mixer, mix cream cheese, sugar, sour cream, and vanilla. Blend until smooth and creamy, scraping sides of the bowl.
5. Whisk eggs in a separate bowl and add to cream cheese mixture. Blend until eggs are incorporated.
6. Pour filling into crust.
7. Place cheesecake into oven and bake for 12 minutes.
8. Turn oven down to 350º and bake until top of cheesecake turns golden brown, 50-60 minutes.
9. Remove cake to a wire rack to cool.
10. Combine topping ingredients in a small bowl and spread over cake.
11. Cover and refrigerate at least 4 hours.

Don't be afraid of the sour cream in the topping, I promise it tastes great! You can also serve the cheesecake any way you want to. I love to drizzle it with melting chocolate or with a fruit syrup.
