24 ounces Sugar (3 cups)
8 ounces Vegetable Shortening (1 cup)
3/4 ounce Salt (1 tablespoon)
2 pounds 4 ounces All purpose flour ( 8 1/2 cups)
1 1/2 ounces Baking Powder (3 tablespoons)
1 1/4 cup Powdered Eggs
1 1/2 ounces Dry Milk Powder (1/2 cup)

Directions:

1. Mix together the shortening, sugar and salt until completely incorporated.

2. In another bowl mix together the remaining dry ingredients.

3. Combine the sugar mixture and dry ingredient mixture and blend until completely combine with no lumps.

4. Store in an air tight container until ready to use.

***TO MAKE 1 DOZEN MUFFINS

2 1/3 CUPS MUFFIN MIX
1 CUP WATER

1 Mix together until smooth and drop into buttered or paper lined muffin tin. Top with Streusel Topping if desired. *For other varieties of muffins see "Personal Notes".

2. Bake at 400º for about 15 - 20 Minutes.

Muffin Variety Additions for 1 dozen Large:
APPLESAUCE: Reduce Water to 1/4 cup, add 1 cup Sweet Applesauce, 1/2 cups Nuts, and 1/4 teaspoon Ground Cloves.
BANANA: 15 ounce Ripe Bananas, 1 teaspoon Cinnamon, 1 teaspoon Nutmeg.
ORANGE-PINEAPPLE: 2 Cups Pineapple Tidbits, 2 teaspoons Orange Extract.
FRUIT OR CHIPS: 2 cups Dried Fruit or Chocolate Chips.
CHOCOLATE- CHOCOLATE CHIP: 2 ounces Cocoa , 2 ounce Sugar, 2 cups Chocolate Chips.
ORANGE-CHOCOLATE CHIP: 2 cups Chocolate Chips, 2 teaspoons Orange Extract.
BROWNIE-NUT: 2 ounces Cocoa, 2 ounce Sugar, 2 cups Nuts.
BLUEBERRY: 2 cups Blueberries.
NUT OR RAISIN: 2 cups Nuts or Raisins.
PINA COLADA: 2 cups Pineapple Tidbits and 1 ounce Coconut.
CARROT-RAISIN: 2 cups Shredded Carrots, 1/2 cups Raisins, 2 teaspoons Cinnamon, 1 teaspoon Nutmeg.
OATMEAL-RAISIN: 9 ounces Oatmeal, 1 cup Raisins, 2 ounces Water.
