Dressing:
8 ounces bacon
3/4 cup fresh orange juice
1/4 cup mince shallots
1/4 cup olive oil
1/4 cup balsamic vinegar

Salad:
3 oranges peeled and clean
10 ounces spinach leaves stems removed
1 medium head radicchio
12 ounces of mixed mushrooms (white, shitake, oyster, whatever) stemmed and sliced

Directions:
Directions:
All ingredients should be at room temperature. Fry bacon (you can cut into bit-sized pieces before or after cooking, remember it shrinks) and remove from fat, then add and lightly saute the sliced mushrooms and shallots, remove and drain. Keep 1/4 cup of bacon fat and combine it with all of the dressing ingredients, season with salt and pepper.

Rip spinach and radicchio into fork-size pieces placing in large salad bowl. Cut cleaned oranges and cover salad evenly with orange pieces, mushrooms and bacon, Lightly coat with dressing, lightly toss, serve and enjoy!
