1 or more Russett potatoes
1/2" of vegetable oil,(or canola oil, grapeseed oil or lard
salt (or seasonings of your choice) v

01 Scrub the potatoes clean or peel them thoroughly. Slice potatoes as thinly as you like ( use a kitchen mandolin if you have one. Soak the slices for about 30 minutes in a large bowl of cold water to remove excess starch. Dry them thoroughly with a clean kitchen towel or layers of paper towels.

02 Heat oil to 350 F in a large heavy pot with high sides to cut down grease spattering ( (or drop a slice of potato in the oil, if it sizzles immediately but gently, the oil is the right temperature. Drain potatoes with a slotted spoon to layers of paper towels on a rack, set over a baking sheet to drain. Sprinkle the chips with salt or other seasoning. Cool completely to room temperature before eating
