2 Cups A.P. flour (plus extra for kneading dough)
1 T baking powder
1//2 tsp. salt
1/3 cup shortening (keep it cold)
3/4 Cup milk (2% )

01 Preheat oven to 450 F.

02 In a large bowl, stir together flour, baking powder and salt. Cut in shortening until the mixture resembles coarse crumbs. Make a well in the dry ingredients and add milk all at once. Stir with a fork until the dough clngs together. You want the dough a bit lumpy; to help your biscuits be perfectly light and flaky.

03 lightly flour work surface and gently knead your biscuits dough just for 10 to 12 strokes. Roll out or pat the dpugh to about 1/2 " thick. Cut the dough with a 2-1/2 " biscuit cutter, dipping the cuttr in flour between each cut.

04 Place each biscuit on a ungreased baking sheet. Bake biscuits until they are lightly golden brown on top, about 12 minutes.
