6 ears fresh corn
(or 2 (1-lb.) cans whole kernel corn)
⅓ cup butter or margarine
¼ cup sugar
1 Tbsp. flour
½ tsp. salt
½ cup evaporated milk
2 eggs, well beaten
2 Tbsp. chopped parsley
1½ tsp. baking powder

With a sharp knife, cut corn from ears (4 cups) or drain canned corn; set aside. Melt butter in saucepan. Add sugar; mix well. Stir in flour and salt until well blended. Remove from heat. Gradually add milk and stir in eggs, blending well. Add parsley and baking powder, mixing quickly. Fold in corn. Pour into lightly buttered 1-qt. casserole.

Bake at 350º for 35-40 minutes.
