Ingredients:  
Large cucumbers peeled, seeded, and cut up like french fries

1 cup pickling lime to 1 gallon water
Mix enough to cover cucumbers---let stand 12 hours stirring carefully several times

Remove from lime water and rinse well--soak in ice cold water 3 hours

Solution:
5 cups sugar
4 cups cider vinegar
1 tbsp. salt
2 tbsp. pickling spice
2 tbsp celery seed

Directions:

Drain cucumbers

Place all spices in a bag
Dissolve sugar in vinegar: add spice bag
Pour over cucumbers

Leave in solution 12 hours

Add: green food coloring bring to boil, cook 30 minutes or until clear

Can while hot
