8½ cups of flour, sifted
1 t. salt
3 pkgs. dry yeast
2 beaten eggs
2½ T. sugar
1 stick of butter and ½ stick margarine melted and cooled
1 12 oz. can evaporated milk
1 cup potato water

Directions:
Directions:
Scald milk and add 1 cup of potato water. Add shortening, sugar and eggs. In a medium sized bowl, combine yeast and ½ cup very warm water and 1 tsp. sugar. Cover and let rise (this takes 10-15 minutes).

When liquid is lukewarm, pour it over the flour then add the yeast mixture and eggs. Knead until the dough no longer clings to your hands. Keep in a warm place until double in size, punch down and let it rise a second time covered with buttered plastic wrap.

Turn dough out on a flour covered board and divide into four parts. Let rise about 10-15 minutes. Roll one section at a time about ¼ inch thick. Cut into 3 ½ inch squares and fill (about 1 tsp.) Pull four corners over filling and seal. Bake at 350 about 30 minutes Butter the tops either before and after baking. Makes 5 to 6 dozen.
