1/4 cup EVOO
2 cups chopped onion
1 cup chopped red bell pepper
1 1/2 lbs boneless, skinless chicken thighs, cut into chunks
2 Tbsp minced garlic
2 tsp minced fresh ginger
1 tsp salt and pepper
1 1/2 cup chopped mango
13.5 oz can coconut milk
1/4 cup lime juice
1/4 cup fresh chopped cilantro

Directions:
Directions:
Heat oil in large skillet. Add onion and bell pepper and cook 5 minutes. Stir in chicken, garlic, ginger, salt and pepper. Cook 4 minutes or until browned. Stir in mango, coconut milk and juice. Bring to a simmer and cook 10-12 minutes or until chicken is done. Stir in cilantro.
