1 1/2 lb boneless, skinless chicken breasts

Salt and pepper
2 Tbsp EVOO
5 Tbsp butter
3/4 cup chopped onion
1 lb baby bellas, sliced
2 Tbsp minced garlic
1 cup Marsala wine
1/2 cup mascarpone cheese
2 tsp Dijon mustard (not honey dijon)
2 Tbsp fresh chopped Italian parsley

Directions:
Directions:
Season chicken with salt and pepper. Cook chicken in oil 4 minutes per side. Remove from pan.

Melt 2 Tbsp butter in same pan over medium-high heat. Add the onion and cook 2 minutes. Add mushrooms and garlic and saute until the juices evaporate about 12 minutes.

Add the marsala wine. Simmer until reduced by half about 4 minutes. Stir in mascarpone and mustard. Return chicken to pan. Simmer, uncovered, about 2 minutes. Stir in chopped parsley. Season to taste with salt and pepper.

Cook pasta and serve.
