1 Russet Potato
1 Sweet Potato
2 Tablespoons Butter
1 Cup Red Bell Pepper
1 Cup Yellow Squash
1 Cup Zucchini
1/2 Red Onion
Salt and Pepper
Eggs

Directions:
Directions:
Cook both the sweet potato and russet potato. Remove skin and dice.
Chop bell peppers, squash, zucchini and onions.
Melt 2 tablespoons of butter in a large skillet, add the chopped vegetables. Cook for a few minutes, and then add the diced potatoes.
Season with salt and pepper and cook until golden brown.
Fry eggs in a separate pan with butter.
Serve the vegetable hash with a fried egg on top of each serving.
