1 cup sugar
½ cup shortening

1 egg
1 tsp. vanilla
½ milk

3½ cups flour
2 tsp. cream of tarter
1 tsp. baking soda
½ tsp. salt

Filling
2 cups raisins
1 cup water
1 cup sugar
2 tsp. flour

Preheat oven to 375º

Cream in large bowl: sugar and softened margarine

Add: egg, milk, vanilla

Sift together in another bowl: flour, cream of tartar, baking soda & salt

Mix: wet and dry ingredients together

Dough will be quite sticky, refrigerate for several hours to stiffen

Grind 2 cups raisins or dates in food processor with 1 cup water

Put in sauce pan
Add: 1 cup sugar and 2 tsp. flour

Cook over medium heat until it bubbles & thickens

Filling:

Roll out dough using lots of flour on table

Cut out with cookie cutters

Place on ungreased cookie sheet

Put small scoop of filling on cookie

Cover with 2nd cookie and seal edges with fingers

Bake: 12-15 minutes
