1 Pork Tenderloin
1 tsp. salt
1 tsp. dried thyme
¼ tsp. pepper
¼ cup finely chopped shallots
1 tsp. butter
1 Tbsp. brown sugar
3 Tbsp. Balsamic Vinegar

Directions:
Directions:
Cut the tenderloin into medallions about an inch and a half thick. Put medallions between sheets of plastic wrap and pound until they are about ½ inch thick. Rub the meat with the spice mix of salt, thyme and pepper. Heat a large skillet (med. heat) spray some Pam and add a pat of butter. Add the pork to the pan and cook about 2 minutes on each side until done. Remove to a warm plate and cover with foil. Turn the heat down and add the shallots and 1 tsp of butter. Cook a few minutes and add the brown sugar and balsamic - stand back or the vinegar will knock you out lol! Cook a minute or so and pour over the pork.
