8 eggs
1/4 c milk
1/4 c cheddar cheese
1/4 c feta cheese crumbles
Salt to taste
Red pepper flakes to taste
4 c spinach
1 c chopped mixed red, green, yellow peppers
1/4 c chopped red onions

Directions:

Spray casserole dish with olive oil spray
Place all of fresh spinach on bottom
Sprinkle veggies over spinach
Sprinkle on cheeses
Whisk eggs and milk with salt and pepper
Pour over veggies and cheeses
Bake in preheated 350* oven for 25-30 minutes
