3 medium cucumbers
1 finely chopped onion
1 finely chopped medium green pepper
1 Tablespoon salt
2 teaspoons mustard seed
½ Cup white vinegar
⅔ Cup of sugar

Directions:
Directions:
Slice cucumber thin. Place in a glass bowl (not tin) with onion and pepper. Toss with salt, mustard seed and let it stand for1 hour. Drain off as much juice as possible. Mix the vinegar and sugar and pour over the cucumber mixture. Stir the mixture. Cover and refrigerate overnight. Serve as a relish or put on sandwiches.

This was my mother's recipe and we have been making it for years. Ed likes it so much, he eats it just by itself. A great summer treat and a good way to use all the cucumbers that you might grow!
