1 cup sugar
1/2 cup shortening
1 egg
1 3/4 cups of sifted flour
1/4 teaspoon baking soda
1/4 teaspoon salt
2 cups rhubarb cut fine
3/4 cup brown sugar
1/2 cup coconut

Directions:
Directions:
Cream sugar and shortening. Add egg, add sifted dry ingredients.Press in bottom of pan. [the reciepe card does not say the size of pan, I would assume it is made for a 7 1/2x 11 1/2 glass baking dish}. Place cut rhubarb mixed with 3/4cup brown sugar. Top with coconut. Bake 45 minutes at 350º. Serve warm with ice cream or chilled with whipped cream.
