1/4 cup butter
1 cup chopped onion
1/2 cup chopped green pepper
1/4 cup chopped celery
1 teaspoon minced garlic
1 1/2 cups long grain rice, uncooked
1 teaspoon parsley
1/2 teaspoon cajun seasoning or to taste
Pinch of salt
1/4 teaspoon pepper
3 cups chicken stock or water

Directions:
Directions:
Melt the butter in a medium saucepan. Add the vegetables, and saute on medium heat for about 5 minutes. Add the rice, and stir over medium heat until it begins to lightly brown. Add the seasonings and the stock/water. Bring to a boil. Reduce heat to simmer. Cover, and let cook 15 to 20 minutes or until cooked through and most of the water has been absorbed. Use a fork to fluff before serving.
