1 cup butter
1 1/2 cups sugar
2 eggs, lightly beaten
2 egg whites
2 teaspoons lemon extract
2 2/3 cups flour
1 teaspoon baking powder
1 can {8oz} crushed pineapple, undrained
Glaze: 1 cup powdered sugar
1/2 tsp lemon extract
1-2 tablespoons milk

Directions:
Directions:
Cream butter and sugar. Add eggs, egg whites, and extract; beat until fluffy, about 2 minutes. Combine flour and baking soda; add to creamed mixture. Stir in pineapple. Pour into greased 10-inch bundt pan. Bake at 350º for 55-60 minutes. Cool in pan for 10 minutes before removing to a wire rack. Cool. In small bowl combine glaze ingredients until smooth. Drizzle over cake.

Blue ribbon winner at Montana State Fair. In the picture is Steve and I with our grandson Brody. Steve’s son Chris and family live in Oregon so we don’t get to visit as much as we would like. Brody has a big sister Kaylee who loves her little brother so much.
