2 1/2 - 3 pounds chicken, cup up
1/4 cup shortening (Crisco)
1/4 cup butter or margarine
1/2 cup flour
1 tsp. salt
1 tsp. paprika
1/4 tsp. pepper

Directions:
Directions:
Heat oven to 425º. Wash chicken and pat dry. In oven, melt shortening and butter in 9x13" baking pan. Mix flour, salt, paprika and pepper. Coat chicken with flour mixture. Place chicken, skin side down in shortening and butter. Bake 30 minutes. Turn chicken, bake 30 minutes longer or until tender. Serves 4.

Country-Crunch Chicken: Heat oven to 350º. Omit flour mixture. Crush 3 cups Corn Flakes. Dip chicken into butter, roll in crushed Corn Flakes. Bake 1 1/2 hours or until chicken is done.

Parmesan Chicken: Omit flour mixture. Melt 1/2 cup butter or margarine in baking pan. Mix 1 cup grated Parmesan cheese, 1 tsp. salt, 1/4 tsp. pepper. Dip chicken into butter and roll in cheese mixture. Bake uncovered at 375º for 1 hour..
