Mom’s Pot Roast

2 ½ lb boneless beef chuck pot roast
2 tablespoons oil
¼ cup flour
2 cloves garlic or 1 tablespoon garlic flakes
1 teaspoon salt
3 bay leaves
1 teaspoon black pepper
1 large onion, cut into wedges
2 stalks celery
2 medium potatoes, cut up
½ Lg bag of baby carrots
1 can cream of mushroom soup
1 envelope of Lipton onion soup mix

Directions:

Preheat oven to 300 degrees. Season the meat with salt & pepper. Sprinkle meat with the flour. In a large roasting pot, add oil and brown meat on both sides. Add garlic, bay leaves, soup mix and cream soup to pot. Next add the onions, celery, potatoes and carrots. Cover and roast in oven for 3 - 4 hrs.
If you prefer to use a crock pot, place vegetables in first, meat on top, then seasonings and liquids. Cook in crock pot 6 – 8 hrs on low.
