5 or 6 squash, sliced
1 bell pepper, chopped
1 chopped onion
1 stick of butter
1 tube of Ritz crackers
¾ c.mayonnaise
2 eggs, beaten
1 c. grated cheese

Directions:
Directions:
In a large pot, cook together sliced yellow squash (can be fresh or frozen). Add chopped bell pepper and chopped onion. Add small amount of water and cook until tender. Drain well. Melt butter to squash mixture and add mayonnaise and beaten eggs. Pour into greased casserole dish. Top with 1 c. grated cheese and put crumbs on top. Bake at 350º until brown on top.
