3 c. grated zucchini
1 c. packed brown sugar
1 c. white sugar
1 c. vegetable oil or apple sauce
4 eggs
3 c. self rising flour
1 tbsp. cinnamon
1 c. raisins
1 c. chopped pecans
1 tsp. salt
1 tbsp. vanilla
Directions:

Mix all ingredients and dip into muffin pans. Bake at 350º for 30-40 minutes or until brown.
