2 cups onion, chopped
2 cups celery, diced
2 Tablespoons butter
1 bag of sage and onion croutons
salt
pepper
3 eggs
2 cans chicken broth

Directions:
Directions:
Saute the celery and onion in 2 Tablespoons butter until cooked through. Mix with some turkey scraps or approx 1/4 lb browned hamb. ( cooking a chicken breast and chopping in small pieces works ok too)
In a large bowl mix the croutons, salt, pepper and 3 eggs.
Add the onion mixture. Add the chicken broth until moist but not really wet. Save any extra in case you want to add a bit more while baking.
Bake in a buttered casserole dish for 1 - 1/2 hours
