¼ pound (1 stick) unsalted butter
3 tablespoons balsamic vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
6 swordfish steaks, 6-8 ounces each about 1 inch thick
Vegetable oil as needed for oiling fish

Directions:
Directions:
Simmer butter in saucepan over medium heat until deep golden brown, about 7 minutes. Remove pan from heat and whisk in vinegar, honey and mustard and season to taste with salt and pepper.

Brush fish generously with oil and lightly sprinkle with salt and pepper.

Heat a large, nonstick skillet over medium-high heat. Add 3 swordfish steaks and saute until just opaque at the center, about 4-5 minutes per side. Transfer to plates and tent with foil to retain heat.

Repeat with the remaining fish.

Whisk sauce over low heat to reheat, spoon over fish and serve!
