2 1/2 cup Cake Flour
1 1/4 cup Sugar
3 Eggs, room temperature
1 cup Water, at room temperature
3 Tbsp. Evaporated Milk
4 tsp. Emulsifying Agent, opt.
1 Tbsp. Lemon Juice
1 tsp. Baking Powder
1 tsp. Flavoriing extract
Food Coloring, few drops

Get steamer on med. heat. Boil water.
Sift flour, baking powder & set aside.
In stand mixer add eggs, sugar & water. Add emulsifying agent & mix on HIGH for 3 - 5 min. or until double in size.
Decrease speed to low then add flour mixture, scrapping down & continue to mxi slowly add milk & lemon juice until combine. Add extract & mix for 30 seconds on low.
Cover & let rest for 30 min. Prepare steamer cupcake pan & pour batter inside, you may change color if desired but not necessary. Fill to the top & steam for 13 - 15 min., on HIGH heat.
Cool on rack, serve.
