3 - 4 lbs. Chicken Thighs

MARINADE:
1 tsp. Salt
1/4 cup Shoyu
1/4 cup Honey
1 1/2 Tbsp. Red Food Coloring
1 - 2 tsp. Chinese 5 Spice Powder

2nd Stage:
1 lb. Char Sieu - minced fine
1 stalk Green Onion, minced
2 Tbsp. Shoyu
1 tsp. Salt
1/2 tsp. Red Food Coloring
1/4 cup Sugar
6 Tbsp. Flour

Directions:
Directions:
Remove bones & cut into strips 1 1/2" wide.
Marinate overnight in ziplock.
Preheat broiler & broil meat on all sides (still in its marinade).
Then lower oven to 400ºF & bake 15 min.
You could put meat back under the broiler with some minced green onion & grated ginger sprinkled on top. Or remove & cool to slice later.
Meat should be crisp on the outside & tender on the inside.
CHAR - big fork/skewer
SIEU - broil.

2nd Stage:
Mix the filling ingredients & allow to stiffen in the refrigerator for 1 hour before using.

***NOTE: Becareful when making the buns not to get the dough too thin or you will have problems removing them from the steamer & they will not rise properly. Make sure when you flatten the dough that the center is thick almost like a small bill while the sides can be flatter than the bottom.
