2 red peppers
1 T olive oil
1 clove garlic crushed
1 shallot, chopped
1/3 cup stock (veg or chicken)

Directions:
Roast peppers on rimmed cookie sheet in 375 F oven for 45 minutes until skins are blackened. Sweat peppers in bag so skins will slip off and once cool enough remove skin, seeds and membranes - discard.

Sauté garlic and shallot in oil for a few minutes, add pepper and cook for few more minutes. Add stock and bring to boil, allow to reduce a little.

Place in blender and blend until smooth, season to taste.

Can be used as base for soup, pasta sauce, etc. - it is wonderful!
