½ quinoa
1 cup chicken broth
1 green onion
½ carrot, finely chopped
½ red pepper, finely chopped
½ zucchini, finely chopped

Dressing:
¼ cup lightly packed fresh basil leaves
1 tbsp. white wine vinegar
1 tsp. maple syrup or honey
1 tsp. original dijon prepared mustard
2 tbsp. extra virgin olive oil

Directions:

1. In a saucepan, bring quinoa and chicken broth to a boil, then reduce heat, cover and simmer approx. 15 minutes or until liquid is absorbed. Remove from heat and keep covered at least 15 minutes to steam quinoa.
2. In a large bowl, combine green onion, carrot, red pepper and zucchini. Set aside.
3. In a small processor or bowl mix basil, vinegar, maple syrup or honey and mustard. Process or stir until just mixed. Pour over vegetable and quinoa mixtures in a bowl and stir. Squeeze juice of ½ a lime over this mixture. Stir in, cool before eating.

You must remember to double this recipe if it is to feed 4 to 6 people. This light, tasty salad is a nice addition to a BBQ dinner.
